During a time when most top bike racers are climbing the ranks of the professional peloton, Jade Wilcoxson was spending her 20s working toward a doctorate degree in physical therapy. But when Wilcoxson discovered that she was pre-diabetic, her instinct was to buy a road bike and completely immerse herself in the sport of cycling. Now, almost a decade later, the 35-year-old Optum Pro Cycling team rider is the reigning U.S. national champion and will be one of several cyclists vying for a spot on the 2016 U.S. Olympic team. We caught up with the Oregon-based rider to find out how she pulled off this incredible transformation.
